When is the best time to eat Coffin Bay oysters?

Coffin Bay oysters are at their best during the Winter months when the ocean water is at it's coldest The water in Coffin Bay is currently around 11 degrees Celcius and the oysters are plump and delicious. As the water warms up during Summer the oysters get close to spawning or spawn and their condition deteriorates significantly. NOW is THE TIME!
